I'm Madeira in West Covina and I'm here with the owner sevens hi I'm Devon I and my wife are the creators of edema in West Covina we are a Korean bar Asian fusion restaurant so how do you come up with the content well originally we want to start a Korean bar in the traditional sense and as the idea evolved we thought about what we grew up and what makes us who we are and in California, we have access to all kinds of food around the world and so we started marrying the ideas of different flavors from different regions and putting it together in our only unique dishes growing up we're exposed to food from all over the place and we started. Playing around with the different flavor profiles from different cuisines and we started creating some of our own dishes that we feel are both foreign and familiar to our audience here in West Covina and so we took the idea of Korean bars that we grew up with and we made our own version of it so when we started the restaurant I really was concerned about the experience and I wanted the high ceilings the nice lights I want people when they come in here to feel relaxed and they have a good time you know somewhere we can bring a date or if you want to have a group of people to be comfortable for everybody. All right how old are you I am going on 35 35 how do you manage to save us to get a restaurant like that well originally happened was instead of buying my wife a huge ring and a nice wedding we decided to save that money and to try to build ourselves a better future a part of the American dream and so we decided that we wanted to start a business and here we are let's get back to your pharmacist, yeah forget the restaurant business um so I being a second-generation or 1.5 generation Asian American my wife as well we actually have a lot of background in the restaurant business I was able to work at modern China cafe in Walnut Creek in Northern California where my uncle runs a successful restaurant bar and there I really learned about customer experience. Customers coming back Bella her mother and her grandmother had a restaurant in Tokyo and from there she really started developing the idea about the quality of food and we really just started marrying some of our ideas together our parents keep hammering into our head that you have to maintain a very high quality of food and the reason being is when the Ueno quality goes down the customer stopped coming back and we try our very diligent in making sure our food is fresh and of good quality and so we treat our customers like our family. We want to serve them the very best that's coming up so we have a really cool dish that I am going to prepare for you and this is a seared salmon over a miso risotto and we kind of started off with a more traditional Italian dish and we just added some Cajun flavoring to it originally the idea came about because we wanted to incorporate more dishes that are both tasty and something that we kind of already have in the kitchen so I was roaming through and I'm looking around the kitchen and one day I made this dish and we have this our employees our associates to try the dish and they all loved it so we're thinking about incorporating this dish onto the main so this is our a series cockles and they are basically a spin on the. Traditional taco auditoría is really not a real word it's just a word ajumma with the word nori which is Japanese for seaweed and put together because we have a series of tacos that are instead of using the traditional tortilla we actually fry a pan for seaweed as taco shell so we'll talk about the soft-shell crab is called holy crap because it's delicious what we did here was we thought about.
